Pick-up from your hotel in Hanoi Old Quarter between 07:00 and 08:00. A short rest stop on the way, arriving in the Mai Chau valley by late morning for a photo stop above the valley before descending. Traditional lunch prepared by a local Thai family — vegetarian available.
The afternoon is by bicycle with your guide through the surrounding villages: farmers working the fields, women at looms weaving the coloured scarves the Thai are known for, and the kind of quiet lanes that reward a slow pace. Free time from 17:00 to cycle further, walk, or browse the weavers' stalls at your own pace.
Dinner in the bungalow, followed by a Thai traditional dance show performed by local dancers in the valley. The evening ends with ruou can — traditional can wine, drunk communally through long bamboo straws from a clay jar. Overnight in a Thai stilt-house bungalow.
Banh Mi moment: The can wine jar in the centre of the table after the dance ends — the musicians still sitting nearby, the bamboo straws passed around, the valley outside completely dark and quiet.
