An hour south of Saigon, the city noise cuts out completely. Ben Luc sits at the edge of the Mekong Delta, where the canals run quiet and the working rhythm of the countryside is still intact.
This is a day of doing rather than watching. You cast a fishing line into the natural canals, handle a motorboat and a hand-rowed sampan, try the farming tasks that riverside households have been practising for generations, then cook your catch with a local family for lunch. The meal is the point: whatever came out of the water that morning, prepared the way the family actually eats it.
