Bamboo Basket Boat and Cooking Class in Hoi An

Trip duration: 4 hours

The half-day starts at Hoi An's central market. Your guide walks the stalls with you — not as a tourist stop, but as a working lesson: which herbs, which produce, and why certain ingredients define the cooking of this region rather than any other in Vietnam.

From the market you head to Cam Thanh, a coastal village just outside Hoi An where the canals run narrow and quiet under dense nipa palms. You board a circular bamboo basket boat — a vessel unique to central Vietnam — and your boatman demonstrates the spinning technique fishermen use to navigate these waterways. You try it yourself.

The day ends in a local kitchen: a hands-on class where you prepare two or three Vietnamese dishes with the ingredients from the morning's market visit. You eat what you made. Hotel pick-up and drop-off, guide, transport, entrance tickets, and the meal: all in.

What you'll experience

🛒

Hoi An central market

A working market walk with your guide: fresh herbs, local produce, and the flavour logic behind central Vietnamese cooking.

🧺

Bamboo basket boat

A circular coracle unique to central Vietnam — woven bamboo sealed with resin, used by fishermen in these canals for generations.

🌴

Cam Thanh nipa canals

Narrow waterways shaded by dense nipa palm forest on the edge of Hoi An, away from the town's tourist circuit.

🌀

The spinning technique

Your boatman demonstrates how local fishermen spin the basket boat to change direction. You get a turn.

👨‍🍳

Hands-on cooking class

Prepare two or three traditional Vietnamese dishes in a local kitchen, using the ingredients you selected at the market.

🍽️

Lunch or dinner you cooked

Sit down to eat the dishes you prepared — the meal is included and tastes better for having made it yourself.

What to expect

  1. Hotel pick-up in Hoi An

Your guide collects you from your hotel. The market is a short drive from most accommodation in the old town.

  2. Hoi An central market: ingredients and flavour logic

Walk the market with your guide before the cooking class. You learn to identify the herbs, read the produce, and understand why central Vietnamese cuisine tastes the way it does. You choose the ingredients for the dishes you'll cook.

  3. Cam Thanh: bamboo basket boat through the nipa palm canals

Drive to Cam Thanh village and board a circular bamboo basket boat. Your boatman navigates the narrow waterways by spinning the vessel with two short oars — a technique specific to these canals. You try the technique yourself.

  4. Cooking class: prepare two or three Vietnamese dishes

In a local kitchen, your guide leads you through the preparation of two or three dishes from central Vietnam. The class is hands-on throughout — you cook, not watch.

  5. Eat the meal you prepared, then return to your hotel

Sit down to lunch or dinner with the group. The meal is what you cooked. Your guide returns you to your hotel when the meal is done.
